Scott, i know you like and respect simple music as well.
Have you ever heard of Opeth?
I particularly love one of their songs which uses some functional harmony in non functional ways.
They keep changing from major to minor and it sounds very good, at least to me.

The song starts in Amin. They go to the 4 (Dmin) and 7(Gmaj) but they flip it to Gmin and end up in Dmaj until they flip to Dmin.
And the whole thing sounds surprisingly melodic.
Opeth are like a progressive death metal band.
However, this song is like a rock ballad with normal singing, no growling at all.
The harmony, at least for rock music, is very interesting.

I'm a bit uncomfortable giving my opinions about other musicians on this forum - I'm not a music critic. These guys are obviously pro musicians but this isn't the kind of "simple music" I like very much, even though there are a few nice chord changes. It's hard for to me to listen to guys playing minor scales over those generic progressions - sounds like rock 101 class at MI.
